
Chef Ricardo Parrinha is 38 years old, born in São Bartolomeu de Messines in the Algarve and is our Executive Sous Chef at Muthu Clube Praia da Oura.
Chef Ricardo Parrinha completed his training in Cooking and Pastry at the Algarve School of Hotel and Tourism, where he had the opportunity to intern and work in some renowned restaurants in the Algarve.
In 2008 he started working at MGM Muthu Hotels (Petchey Leisure at the time) as a cook where he gained experience in interacting with the different Chefs he worked. In 2012, he was promoted to chef and worked at all the Group Hotels in Albufeira. In 2015 he was promoted to Executive Sous Chef and is currently located at Muthu Clube Praia da Oura, the largest Resort in the Group.
Portuguese Steak by Ricardo Parrinha

Ingredients:
- 3 Ham slices
- 1 Beefsteak (+- 200grs)
- 2 garlic cloves
- 1 Bay Leaf
- 1 Glass of White Wine
- 2 tablespoons butter
- 2 large potatoes
- Parsley
- Salt
- Black Pepper
- Olive oil
Method:
- Start by frying the ham in a frying pan with olive oil to perfume the olive oil where we will fry the steak. Once the ham is crispy remove and drain.
- Put the steak in the frying pan season with salt and pepper and cook about 2 minutes each side (depending on the taste), add the garlic and bay leaf. When almost fried, sprinkle with white wine, reduce and add butter.
- Cut the potato into thin slices and fry. Once fried sprinkle with chopped parsley.
- Place the steak on a plate and the ham on top. Spread the potatoes around the steak and pour the sauce.
